Oyster Mushroom Growing Guide UK — From Spawn to Harvest

Why Grow Oyster Mushrooms?

Oyster mushrooms (Pleurotus ostreatus) are the perfect starting point for anyone new to mushroom cultivation. They grow fast (often fruiting within 2–3 weeks of inoculation), tolerate a wide range of conditions, and produce generous flushes of flavourful mushrooms that sell well at farmers markets and are increasingly popular in UK home kitchens.

What You'll Need

  • Oyster mushroom spawn (grain spawn or plug spawn)
  • Autoclavable mushroom grow bags or a monotub kit
  • Substrate: straw, hardwood sawdust, or a straw/bran mix
  • Pressure cooker or autoclave for sterilisation
  • Still air box or flow hood for inoculation
  • Spray bottle for misting
  • Thermometer and hygrometer (included in our XXL Still Air Box Kit)

Step 1 — Prepare Your Substrate

Oyster mushrooms grow well on a variety of substrates. For beginners, pasteurised straw is the easiest option:

  1. Chop straw into 5–10cm lengths.
  2. Submerge in boiling water for 1–2 hours (pasteurisation — not full sterilisation).
  3. Drain and allow to cool to room temperature before inoculating.
  4. Squeeze a handful — only a few drops of water should come out. Too wet = contamination risk.

For higher yields, use a hardwood sawdust and wheat bran mix (80:20). This requires full sterilisation in a pressure cooker at 15 PSI for 2.5 hours.

Step 2 — Inoculate Your Bags

  1. Work inside a still air box to minimise contamination.
  2. Layer substrate and grain spawn alternately inside your grow bag — aim for 10–15% spawn rate by weight.
  3. Seal the bag, leaving the filter patch exposed for gas exchange.
  4. Label with the date and variety.

Step 3 — Colonisation (10–21 Days)

Store inoculated bags at 20–25°C in a dark location. White mycelium will spread through the substrate over 10–21 days. A fully colonised bag will be almost entirely white and may feel firm to the touch.

Healthy signs: Bright white, fluffy mycelium spreading evenly.
Warning signs: Green, black, or pink patches = contamination. Remove immediately.

Step 4 — Initiate Fruiting

Once fully colonised, trigger fruiting by:

  1. Moving bags to a cooler area (15–20°C) — the temperature drop signals the mushrooms to fruit.
  2. Cutting 2–3 slits (5cm each) into the side of the bag.
  3. Misting the cut areas 2–3 times daily with clean water.
  4. Ensuring fresh air exchange — fan the bag briefly when misting to reduce CO₂ build-up.
  5. Providing indirect light for 12 hours per day.

Pins (tiny mushroom primordia) should appear within 5–10 days of initiating fruiting conditions.

Step 5 — Harvest

Harvest oyster mushrooms just before the caps fully flatten — when the edges are still slightly curled under. At this stage they have maximum flavour and shelf life.

  • Twist and pull the entire cluster from the base in one motion.
  • Do not leave stumps — they can rot and cause contamination.
  • Wipe the harvest area clean with a damp cloth.

After harvesting, mist the bag and allow it to rest for 5–7 days. A second flush will follow, and most bags will produce 2–4 flushes before the substrate is exhausted.

UK Growing Conditions — Seasonal Tips

  • Summer (June–August): Temperatures may exceed the ideal fruiting range. Move bags to a cooler room or use a fan to maintain 15–20°C.
  • Winter (November–February): Colonisation may slow in cold rooms. Use a heat mat during colonisation to maintain 20–25°C, then remove for fruiting.
  • Spring and Autumn: Ideal natural conditions for oyster mushrooms in the UK — expect your fastest and most productive grows.
